this is my fav way, melt some butter in a pan, then mince a clove or two of garlic, and saute that in the butter, then take some flour, and mix in 1-2 tsp of oregano, parsley, and basil. then i add a little bit of Cayenne pepper. mix that and coat the chicken, place in pan and cook for about 8-10 minutes per side. serve over top a plate of butter noodles. me and my fiance love this!

  2. There are some really amazing recipes on the site below, I but the link to their chicken breast recipes, but you should also check out the chicken thigh recipes too, there are some really great Indian recipes there. You could just use chicken breasts in place of the thigh meat for a healthier meal.

Also take a look at the chicken burgers, they are wonderful and a great healthy alternative to red meat.

  3. For health reasons, I’ll leave out Fried Chicken. Turkey breast is another good alternative, as is lean pork.

You can marinate the chicken to give it better flavor. It all depends on what you’re doing. Usually, you’ll want an oil, aromatic, and something acidic, so, olive oil, garlic, lemon juice and thyme would be a good marinade.

Grilling the chicken is a lot healthier than pan frying it in oil.

Anyways, I can’t say too much, or I’ll be here forever listing different ways to make chicken. Best is to get the chicken breast, and ask us how to make a certain type of dish or ask for ideas on how to make healthy italian recipe’s using chicken breast.

  4. Plain grilled chicken breast is too dry for my taste. But you can hide it a lot of ways. Only thing is, I don’t know how much of this is “healthy”.

    Chicken Quesadilla
3 c. chicken, cooked and shredded.
    1 can enchilada sauce
    1/4 c sour cream
1 can green chiles, drained (optional)
    1 1/2 c Mozzarella cheese
flour tortillas (thicker ones are better)

Preheat oven to 375. Spray cookie sheet. Mix all ingredients except tortillas together. Put mound of filling in center of tortillas. Spread to within 1/2 inch of edge. Moisten edge with water. Top with another tortilla (edges moistened). Press outer edges together. Bake 10 – 15 minutes until crisp. Cut tortillas into quarters with pizza cutter.

    Patty’s Pineapple Chicken

    3 – 4 lbs chicken
    1 medium can pineapple chunks
    1 chopped green pepper
    2 Tbs. brown sugar
    soy sauce

Season and flour chicken. Brown in oil. Place in 13 x 9 pan. Combine pineapple (reserve juice from can) and pepper to chicken. Combine reserved juice and brown sugar. Pour over chicken. Sprinkle with soy sauce. Bake at 350 for 1/2 hour. Turn pieces and bake 20 – 30 minutes longer.

In general baked chicken is moister than grilled chicken.

    Herb Chicken with Apples
1 can Healthy Choices Cream of Roasted Chicken with Herbs
    1/2 c. non-fat milk
    1/2 tsp. Italian Seasoning
4 skinless, boneless chicken breast halves
2 medium apples, cored and sliced
1 small onion, cut into thin rings

In small bowl, mix soup, mmilk, and seasoning; set aside.
Spray large non-stick skillet with vegetable cooking spray. Heat over medium heat one minute. Add chicken and brown 5 minutes on each side. Remove from skillet. Add apples and onions to skillet and cook until onion is tender. Stir in soup mixture. Return chicken to skillet; reduce heat to low. Simmer covered 5 -10 minutes or until chicken is no longer pink in the center.

  5. Probably a lot of good ideas there, but if you’re cooking breasts (especially in a skillet) there are some things to understand so that they won’t get overcooked and “dry”. (The “white meat” of poultry is very-very lean, so can’t take too much cooking. . . the dark meat can take more, but has more fat. )

Check out this video lesson for how to make a basic “sauted” chicken breast *well* (probably with just salt and pepper, and perhaps a bit of powdered garlic before starting–can’t remember):
http://rouxbe. com/cooking-school/lessons/170-pan-frying (the video takes a short while to load. . . also wait after each segment, and next segment will start playing automatically)

And here are some other ideas for “delicious” and healthy chicken breasts:

  6. Slice it into strips, marinate it in Italian Herb marinade or dressing overnight. Then grill the strips quickly and put over Cesare salad.

Marinate in Mexican seasonings as strips and grill. Quick saute peppers, onions. Add olives, salsa meat, peppers to flour tortillas to make fajitas.

Slice breasts horizontally then pound even flatter. Dredge in flour, then bread crumbs then quick fry about 3 minutes per side. Put layer in casserole dish, put disk of mozzarella cheese and pour favorite spaghetti sauce. Sprinkle with parmigiana cheese and bake for a while.
